A high-grade creamy halloumi following the traditional Cypriot method starting with raw milk which involves a long poaching process to
ensure it captures the full flavour of the high grade milk and it holds its shape when heated.
The halloumi is then aged for a few weeks in minted brine to further develop flavour.
